To deliver a classically sherried profile, Billy Walker hand-selected Pedro Ximénez and Oloroso casks to be married with spirit maturing in red wine barriques and medium toast/medium char American virgin oak barrels.
Nose: A touch of redcurrant alongside nougat, teak, crème de cassis and cappuccino. Stewed cherries with an hint of almond. Then a decent amount of sandalwood, some cigar boxes and resin.
Taste: Cracked black peppercorns, cloves, a touch of ginger and some mocha. Also peach pits, some cherry liqueur and eucalyptus.
Natural colour, non chill-filtered.
